I wouldn't try to dry them over again, but I would possibly try to re-hydrate them and use them like that...for example in a soup. Just make sure you cut it into bite sized pieces and go against the grain. As for your beef jerky, just make a new batch. This time though before you dry the meat cut off a small piece, cook it, and taste it...if its still under seasoned fix it before you dehydrate.
